Posljednjih se godina sve vi\u0161e pri\u010da o plant based prehrani, odnosno prehrani temeljenoj na biljnim izvorima koja ima brojne dobrobiti na zdravlje \u010dovjeka, ali i planeta. \u0160to je plant based prehrana, \u0161to sve treba sadr\u017eavati jedan tjedni jelovnik, je li ovo modni trend ili utemeljena preporuka, govore profesorica Darija Vrane\u0161i\u0107 Bender, klini\u010dka nutricionistkinja i Anet Re\u017eek Jambrak, profesorica s Prehrambeno-biotehnolo\u0161kog fakulteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Plant based prehrana ili prehrana temeljena na biljnim izvorima, biljnoj osnovi, je jedan zapravo vrlo \u0161iroki dijapazon raznih prehrambenih obrazaca koji podrazumijevaju vi\u0161i udio hrane biljnog porijekla i ni\u017ei udio hrane \u017eivotinjskog porijekla. Da odmah stavimo stvari u nekakve primjere, mediteranska prehrana je jedan oblik recimo plant based prehrane, ka\u017ee <strong>Darija Vrane\u0161i\u0107 Bender,<\/strong> klini\u010dka nutricionistkinja.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Koja nam je bliska i zdrava. Nadalje, \u010desto se ovdje primjenjuje i pojam fleksiterijanstva, odnosno fleksibilnog vegetarijanstva \u2013 liberalan je to pristup prehrani koji zahtijeva vi\u0161i unos hrane biljnog porijekla, isti\u010de profesorica Darija.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Udio vegetarijanaca i onih osoba koji se deklariraju kao vegetarijanci, u Hrvatskoj ih je 3-5%. A u vegetarijance spadaju i oni koji su i fleksibilni vegetarijanci. Me\u0111utim, budu\u0107i da to, ti pojmovi nisu tako o\u0161tro ome\u0111eni, onda ne mo\u017eemo govoriti ni o nekakvim o\u0161tro podijeljenim brojkama, ali ono \u0161to je svakako \u010dinjenica,da je sve ve\u0107i broj ljudi onih koji se zapravo na neki na\u010din okre\u0107u tim biljnim izvorima i tako oboga\u0107uju svoju prehranu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Vegetarijanstvo, veganstvo, pogotovo veganstvo tu se apsolutno ne konzumiraju namirnice animalnog podrijetla uop\u0107e, a zna\u010di kad govorimo o plant based prehrani, zna\u010di to je fleksiterijanstvo, zna\u010di tu je osnovna razlika zna\u010di da osoba konzumira te plant based proizvode ve\u0107inom, a koji put uklju\u010duje namirnice animalnog podrijetla, zna\u010di koji put uklju\u010duje meso i mlijeko.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iako nemamo dobar prijevod plant based prehrane, osim oboga\u0107enja prehrane, ovakav prehrambeni odabir ima i povoljan utjecaj na okoli\u0161 u kojemu \u017eivimo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Uglji\u010dni otisak je u biti kvantitativni jedan pojam koji kvantificira nekakav utjecaj zna\u010di nekakve aktivnosti, samog na\u010dina \u017eivota, procesiranja na okoli\u0161, zna\u010di na klimatske promjene i ubiti tu govorimo o uglji\u010dnom otisku. Ono \u0161to je va\u017eno, takav na\u010din prehrane svakako ima pozitivan utjecaj zato \u0161to za proizvodnju takvih proizvoda, zna\u010di za uzgoj namirnica biljnog podrijetla, zna\u010di gra\u0161ak, bob ili naprimjer grah, ora\u0161asti plodovi pogotovo, apsolutno je manji taj uglji\u010dni otisak i ubiti je sama manje one\u010di\u0161\u0107enje okoli\u0161a, ka\u017ee <strong>Anet Re\u017eek Jambrak<\/strong>, voditeljica Laboratorija za odr\u017eivi razvoj, PBF.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Klju\u010d je svega, pa tako i ovog na\u010dina prehrane, uravnote\u017eena i izbalansirana prehrana. Kako treba izgledati jedan takav jelovnik?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Iznimno su va\u017ene cjelovite \u017eitarice, va\u017ene su mahunarke kao jedan bitan izvor proteina, zatim bitni su nam ora\u0161asti plodovi kao izvor energije, razno raznih mineralnih tvari, dobrih masno\u0107a, sjemenke isto tako sli\u010dno kao ora\u0161asti plodovi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Uz naravno, povr\u0107e i vo\u0107e. \u0160to se pak ti\u010de deficita odre\u0111enih nutrijenata, \u0161anse su ovdje iznimno male. Jedino treba paziti na dovoljan unos proteina \u0161to se uz povremenu konzumaciju jaja, mlije\u010dnih proizvoda i mesa, ribe, te\u0161ko mo\u017ee dogoditi. Uz ovakav na\u010din prehrane, u prvi plan dolaze fitokemikalije koje su bitne za prevenciju brojnih zdravstvenih tegoba i bolesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Ako se dugoro\u010dno pridr\u017eavamo plant based prehrane, mo\u017eemo smanjiti rizik od primjerice koronarne bolesti srca gotovo za 50%, cerebrovaskularnih bolesti za 30%, zatim dijabetesa i metaboli\u010dnog sindroma, upravo onih kroni\u010dnih nezaraznih bolesti koje predstavljaju najve\u0107u prijetnju zdravlju na\u0161e populacije, otprilike za isto tako 50 posto. sve to skupa zapravo zahvaljujemo toj nutritivnoj gusto\u0107i, dakle visokom udjelu nutrijenata u recimo ne\u0161to manjem energijskom unosu, tako da se smanjuje i rizik pojave pretilosti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ali i pojave kroni\u010dnih nezaraznih bolesti, upalnih bolesti, a dugoro\u010dno i od autoimunih bolesti i alergija.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Dakle, mladi ljudi su potro\u0161a\u010di tih proizvoda koje se sve vi\u0161e temelje na biljnoj osnovi, recimo zamjene za meso, zamjene za mlijeko, jednim dijelom zbog svjesnosti jer ta mlada generacija je vi\u0161e svjesna i okoli\u0161a u kojem \u017eivi i svog zdravlja i zapravo odr\u017eanja zdravoga tijela, ali i na\u017ealost i zbog porasta alergija i autoimunih bolesti u mladim populacijama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Edukacija o ovakvom na\u010dinu prehrane iznimno je bitna. Tako i na PBF-u u Laboratoriju za odr\u017eivi razvoj provode I Q vegan \u2013 razvoj kurikuluma za budu\u0107a zanimanja koja \u0107e se baviti razvojem proizvoda iz biljnih izvora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; Poanta je educirati na\u0161e budu\u0107e stru\u010dnjake u podru\u010dju procesa i razvoja proizvoda na bazi namirnica iz biljnog izvora.
