Trebamo li te proizvode pri\u017eeljkivati na svojem stolu, te na koji bi na\u010din njihovi proizvo\u0111a\u010di trebali unaprijediti proizvodnju, komentirale su u emisiji Dobro jutro, Hrvatska prof.dr.sc. Jelka Pleadin, voditeljica Laboratorija za analiti\u010dku kemiju Hrvatskog veterinarskog instituta i dr.sc. Manuela Zadravec, zamjenica voditelja Laboratorija za mikrobiologiju hrane za \u017eivotinje Hrvatskog veterinarskog instituta.<\/strong><\/p>\n\n\n\n<p>&#8211; Proizvo\u0111a\u010di trebaju obratiti pozornost da usmjere svoju proizvodnju na taj na\u010din da bude sve higijenski ispravno, kako ne bi do\u0161lo do kontaminacije i kako bi proizvod bio valjan nakon cijelog postupka proizvodnje, isti\u010de Pleadin.<br><br><strong>Mitotoksini i plijesan u suhomesnatim proizvodima<\/strong><br><br>Na Veterinarskom institutu u tijeku je projekt \u201eMikotoksini u hrvatskim tradicionalnim mesnim proizvodima: molekularna identifikacija plijesni producenata i procjena izlo\u017eenosti potro\u0161a\u010da&#8221;. Pleadin obja\u0161njava kako su mikotoksini toksi\u010dni producenti plijesni koji obrastaju suhomesnate proizvode, te da mogu \u0161tetno djelovati na ljudsko zdravlje.<br><br>&#8211; Uglavnom su neistra\u017eeni &#8211; svega njih pedesetak od vi\u0161e stotina je detaljnije istra\u017eeno, ali je te\u0161ko sprije\u010diti kontaminaciju. Unato\u010d primjeni dobre poljoprivredne i proizvo\u0111a\u010dke prakse doga\u0111a se kod mesnih proizvoda da budu kontaminirani tim tvarima, ka\u017ee.<br><br><strong>Dobra i lo\u0161a plijesan<\/strong><br><br>Kroz projekt je obuhva\u0107eno 270 uzoraka iz svih cijele Hrvatske koji su kupljeni na tr\u017ei\u0161tu i obra\u0111eni u laboratoriju, a Zadravec je objasnila kako je to istra\u017eivanje teklo<br><br>&#8211; Prvo smo radili profil plijesni koji obrastaju povr\u0161inu suhomesnatih proizvoda, a paralelno su se radili mikotoskini. Zapravo je po\u017eeljno da se razvije plijesan na povr\u0161ini suhomesnatog proizvoda jer ona da taj okus i miris, a osim toga \u0161titi taj proizvod da ne bi neki drugi patogeni mikroorganizmi po\u010deli rasti zbog \u010dega bi se proizvod kvario. Plijesan sprje\u010dava sun\u010deve zrake i kisik da prodiru pa su zato proizvodi crveni i imaju lijepu boju, a sprje\u010dava i da se proizvod previ\u0161e osu\u0161i, ka\u017ee Zadravec.<br><br>Pleadin isti\u010de kako su suhomesnati proizvodi nutritivno bogati i imaju visoku energetsku vrijednost, no imaju i visoki udio zasi\u0107enih masnih kiselina i soli.<br><br>&#8211; Trebamo ih konzumirati ograni\u010deno u skladu s balansiranom prehranom. Kad govorimo o sigurnosti i mikotoksinima, oni su jedan dio sigurnosti \u2013 naime, da bi proizvo\u0111a\u010d plasirao takav proizvod na tr\u017ei\u0161te treba dati na analizu i ostale mogu\u0107e kontaminante kao \u0161to su aditivi, alergeni, antibiotici i te\u0161ki metali. Puno toga \u010dini sigurnost proizvoda, a mikotoksini su samo jedan od aspekata, ka\u017ee i dodaje kako je ovo istra\u017eivanje znanstveno-istra\u017eiva\u010dki projekt i financirano je iz sredstava Hrvatske zaklade za znanost.<\/p>\n\n\n\n<div style=\"width: 640px;\" class=\"wp-video\"><video class=\"wp-video-shortcode\" id=\"video-90294-1\" width=\"640\" height=\"360\" preload=\"metadata\" controls=\"controls\"><source type=\"video\/mp4\" src=\"https:\/\/api.hrt.hr\/media\/be\/a8\/djh-sigurnost-hrane-2610-20211027063222.mp4?_=1\" \/><a href=\"https:\/\/api.hrt.hr\/media\/be\/a8\/djh-sigurnost-hrane-2610-20211027063222.mp4\">https:\/\/api.hrt.hr\/media\/be\/a8\/djh-sigurnost-hrane-2610-20211027063222.mp4<\/a><\/video><\/div>\n\n\n\n<p>&#8211; Istra\u017eivanja su jo\u0161 uvijek u tijeku, razinu mikotoksina smo ve\u0107 utvrdili, kao i kvalitetu, a ono \u0161to planiramo je staviti u poveznicu pojavnost tih toksi\u010dnih tvari sa klimatskim prilikama po svim regijama Hrvatske. Kada dobijemo tu povezanost pojavnosti planiramo iz svih tih rezultata dati vrijedne i korisne preporuke za proizvo\u0111a\u010de kroz bro\u0161uru koja bi davala naputak kako da proizvode mesne proizvode bez da su kontaminirani toksi\u010dnim tvarima, obja\u0161njava Pleadin.<br><br><strong>Potreban zakon&nbsp;<\/strong><br><br>Zadravec isti\u010de kako je cilj projekta vidjeti i izlo\u017eenost hrvatskih potro\u0161a\u010da takvim suhomesnatim proizvodima.<br><br>&#8211; To \u0107e raditi Hrvatska agencija za poljoprivredu i hranu.
