S \u010ditateljima magazina Gloria podijelio je svoj najdra\u017ei recept.<\/p>\n\n\n\n<p>U posljednjih go\u00ad\u00addinu dana puno se toga promijenilo u \u017eivotu <strong>Vinka \u0106emera\u0161a<\/strong> (26). Zahvaljuju\u0107i pobjedi u glazbenom TV showu The Voice Hrvatska vrlo brzo je od nepoznatog mladi\u0107a iz \u010capljine postao prepoznatljivi pjeva\u010d, koji je publiku osvojio obradom pjesme \u201cPelin i med\u201d <strong>Dina Dvornika<\/strong>. Uslijedili su singlovi \u201cSamo da ti si tu\u201d, \u201cNau\u010di me\u201d i \u201cDobro je\u201d te nedavno objavljen debitantski album \u201cNa putu\u201d, snimljen s prate\u0107om grupom Talvi Tuuli. Vinko se brzo navikao na davanje intervjua, koncerte i studijska snimanja, ali je zadr\u017eao i jednu staru naviku u kojoj u\u017eiva &#8211; kuhanje. Osobito rado kuha jela poput hercegova\u010dkog to\u0107a.<\/p>\n\n\n\n<p><strong>Za\u0161to vam je taj gula\u0161 toliko va\u017ean?<\/strong><\/p>\n\n\n\n<p>&#8211; Kada smo prije jedanaest godina u \u010capljini po\u010deli organizirati JazFest, bilo nam je va\u017eno da gosti uz dobru glazbu u\u017eivaju i u dobroj hrani. Zbog velikog broja posjetitelja to je trebalo biti ne\u0161to \u0161to se relativno jednostavno mo\u017ee pripremiti u dovoljnim koli\u010dinama, a da nije ro\u0161tilj. U svakom slu\u010daju, ne\u0161to druk\u010dije za alternativnu publiku. Brzo smo se slo\u017eili da je to to\u0107, kako zovemo na\u0161 tradicionalni gula\u0161 uz koji smo svi odrasli. Svaka ku\u0107a ima svoj recept, koji se za nijansu razlikuje od drugih, ali osnova je jednaka: nekoliko vrsta mesa, uglavnom divlja\u010di, malo vina i vi\u0161esatno kuhanje.<\/p>\n\n\n\n<p><strong>Kakva je reakcija ku\u0161a\u010da?<\/strong><\/p>\n\n\n\n<p>&#8211; Odli\u010dna! Svatko tko ga jednom ku\u0161a, rado se zbog njega vra\u0107a u Hercegovinu.<\/p>\n\n\n\n<p><strong>Uz koji prilog najbolje prija?<\/strong><\/p>\n\n\n\n<p>&#8211; Gotovo da nema priloga uz koji ne odgovara. Mo\u017ee se jesti i sam, sa \u0161nitom kvalitetnog kruha, ali meni je najdra\u017ei s doma\u0107im njokima.<\/p>\n\n\n\n<p><strong>Koje vino poslu\u017eiti uz to\u0107?<\/strong><\/p>\n\n\n\n<p>&#8211; Obavezno crno. Dobro se sljubljuje uz vi\u0161e vrsta, ali ako mo\u017eete nabaviti hercegova\u010dko doma\u0107e vino, sigurno ne\u0107ete pogrije\u0161iti.<\/p>\n\n\n\n<p><strong>Od koga ste nau\u010dili najvi\u0161e kulinarskih tajni?<\/strong><\/p>\n\n\n\n<p>&#8211; Osnovama kuhanja nau\u010dila me majka Danije\u00ad\u00adla, a nekoliko trikova doznao sam i dok sam nakon srednje \u0161kole pet godina sezonski radio kao konobar u Trogiru. Uvijek me je zanimalo malo zaviriti i u kuhinju. Mo\u017eda sam \u010dak kuharima i previ\u0161e dosa\u0111ivao pitanjima \u201ca kako ovo, a kako ono\u201d, ali na kraju sam prili\u010dno toga doznao.<\/p>\n\n\n\n<p><strong>Uz kakva ste jela odrasli?<\/strong><\/p>\n\n\n\n<p>&#8211; Uglavnom su to bila razna variva. Zanimljivo je da mi se to u djetinjstvu nije nimalo svi\u0111alo. Kada bi mama rekla da je za ru\u010dak grah ili ra\u0161tika, samo bih zakolutao o\u010dima. Danas mi nema sla\u0111eg jela.<\/p>\n\n\n\n<p><strong>Sje\u0107ate li se prvog jela koje ste sami pripremili?<\/strong><\/p>\n\n\n\n<p>&#8211; Nikada ne\u0107u zaboraviti u\u0161tipke koje sam ispekao kada sam imao \u010detrnaest godina. Naizgled nema jednostavnijeg recepta, samo bra\u0161no, sol i voda, ali nije tako jednostavno pogoditi prave omjere. Kada donesete u\u0161tipke na hercegova\u010dki stol, oni moraju biti savr\u0161eni. Moji su bili za prste polizati. Dodate li malo sira iz mijeha i pr\u0161uta, dobili ste pravu poslasticu.<\/p>\n\n\n\n<p><strong>Hercegova\u010dki to\u0107&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>Sastojci:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>50 dag junetine<\/li><li>50 dag divlja\u010di<\/li><li>1 kg luka<\/li><li>1 mrkva<\/li><li>1 \u010de\u0161njak<\/li><li>malo maslinova ulja<\/li><li>vode i crnog vina po potrebi<\/li><li>sol i papar<\/li><li>ljuta paprika,&nbsp;<\/li><li>1 \u017eli\u010dica mljevene crvene paprike<\/li><li>2 lovorova lista,&nbsp;<\/li><li>malo koncentrata raj\u010dice<\/li><\/ul>\n\n\n\n<p><strong>Priprava:\u00a0<\/strong><\/p>\n\n\n\n<p>Luk i \u010de\u0161njak nasjeckati i pirjati. Zatim dodati meso narezano na kockice, posoliti, popapriti, dodati naribanu mrkvu i dobro promije\u0161ati. Potom dodati papriku te dalje pirjati na laganoj vatri uz povremeno dolijevanje vode i vina. \u010cesto mije\u0161ati da ne zagori. Kad je meso napola kuhano, dodati lovorov list, a pri kraju kuhanja koncentrat raj\u010dice da se umak zgusne.
